Located in the Navarran town of Mendavía, at the foot of the river Ebro, the winery Baron of Law It was born in an old fortified castle dating from the year 1548. Thanks to the influence of the continental climate and its thermal oscillations, a berry with good sugar and acidity is achieved. The harvest is manual when the grape reaches its optimum moment of maturation.
In the winery the grapes of Semisweet White Law Baron they are destemmed and gently pressed. The must obtained ferments at a low temperature (between 12ºC and 14ºC) in stainless steel tanks. Finally, this fermentation is stopped by applying a temperature of -4ºC so that the yeasts stop working and a residual sugar remains in the wine.
