VINEYARDS-YIELDS:

A main part of our own vineyards in Serrada (102 Has) and La Seca (23 Has) is dedicated to the cultivation of the Verdejo variety. Vines cultivated with care and with moderate yields allow us to notably express this excellent variety and the best virtues of the production area.

SOILS:

The estate that surrounds the winery sits on poor soils, mostly gravelly typical of Rueda, with areas also of high quality sandy soils.

DOMINANT CLIMATE:

Of marked Continental influence.

VINTAGE:

The grape is harvested overnight, at cool temperatures in order to preserve and maximize its organoleptic qualities.

WINEMAKING:

Made exclusively with our own plots that surround the winery. The grapes, harvested at night in an impeccable sanitary condition, are subjected to a cooling process before proceeding to a selection of the musts by means of a gentle pressing. Fermentation with its finest lees is conducted at controlled temperatures of between 15 and 17 º. Subsequently, the wine is kept with its fine lees and a careful refining work until the moment of its stabilization and final bottling.

TOTAL STAY IN BARREL:

It does not go through the barrel.
