Selection of plots from our vineyards in Sta. Gadea. Clay-calcareous soil, very poor in fertility and low production.
Elaboration
After a brief cold pre-fermentation for 6 days below 12ºC, a controlled alcoholic fermentation begins, with the sowing of our selected yeasts.
Fermentation in stainless steel tanks with pumping over and two daily controls of density and temperature. At the end of this fermentation, the malolactic begins without the addition of bacteria, tempering the cellar at 22º C for 24 days.
It is racked separating the lees without filtering or clarifying.
The wine rests in 300-liter French oak barrels for 5 months.
Tasting
Clean and bright cherry color, with an intense floral aroma and red forest fruit, assembled with light spicy touches. In the mouth it is wide, fresh, persistent and velvety.
