HARVEST AND PREPARATION: The winter 2015 - 2016 was cold and dry. Spring not very warm and with abundant rains in April and May, with moderate insolation. The summer was very dry and hot, with maximum temperatures above average. It was a climatologically almost perfect year for the vineyard. The harvest began on October 4 and ended on November 3 with the Cabernet Sauvignon. The grapes came in healthy and dry, with good weather and little rain. The yields were higher than expected and yet the quality of the grapes was excellent. In the winery the movement of the grapes is by gravity, without pumps, smoothly. The grapes arrive destemmed and whole at the warehouse.
